Ingredients

  • 1 scoop MN Plant Protein Banana Nut Muffin
  • 2 mashed Bananas (over ripe)
  • 2 cups (200g) Almond Meal
  • 1 tsp Baking Powder
  • 1/4 cup Coconut Oil (or Extra Virgin Olive Oil)
  • 1/4 cup Honey (or Agave Syrup)
  • 1 tsp Vanilla Extract
  • 2 Eggs
  • OPTIONAL
  • 1/2 cup Walnuts
  • 1 serve MN Custard Protein (extra protein & taste)

DIRECTIONS

  1. Makes 10
  2. Preheat oven 160 degrees (fan forced)
  3. In a bowl, combine all dry ingredients & stir
  4. Add mashed banana, eggs, coconut oil, honey & mix
  5. Spray loaf tin with oil spray
  6. Pour mixture into tin and place in oven
  7. Bake for 20-30mins
  8. Allow time to cool before slicing
